Feeling adventurous this morning (after mostly cleaning the oven), I picked up my copy of “Joy of Cooking” and flipped to the eggs section and saw that we had all the ingredients for “Eggs Baked in Bacon Cups.” It’s really just lightly cooking some bacon, lining muffin cups with them and then baking, after adding some spice and butter. Really easy, and very tasty, and very presentable (I put some bread on the rack and made toast, too). I also liked that they were individual servings, so if I made it another time with a different group, I could scale the recipe up easily. I did find that I needed to bake them about twice as long as called for (20 minutes vs. 10) just to get the whites to turn opaque, and ended up cooking them 25 or 30 minutes to get semi-solid yolks (so TCB would eat it.)
While I was waiting, I flipped through the other chapters, and there’s some really good recipes that I’d like to try (including some slightly unusual ones.) I’m going to generally start in the area of “Brunch, Lunch and Supper Dishes” and see where things go from there. Next up: meat pies (or: homemade hot pockets.)
