Pasta … thing

Another recipe from another night, another handful of things in the fridge and on the counter.

  • half a box of pasta (gf quinoa pasta in this house)
  • 1 egg
  • 1 lb beef
  • 1 jar pasta sauce
  • cheese (we had 1/4 c shredded cheddar, 2 slices of cheddar, and lots of kraft singles)
  • 1 green pepper, diced
  • handful of frozen mushrooms
  • cup or two of frozen spinach

Brown the beef, adding the mushrooms, some of the green pepper, and the spinach when it’s nearly done, then add the pasta sauce, turning down to a simmer. Meanwhile, cook pasta, drain, add the egg and shredded cheese. Mix well and put it in a pie dish (totally ok to mash it down). Top with the green pepper (and a little extra cheese), then a layer of the sauce mix (maybe half? you won’t use it all), and then whatever cheese you have left. Bake uncovered for 30 minutes. (If you find that you’re tearing up the kraft singles to top the pie, don’t put them on until the last 5-10 minutes of cooking.)

We ended up putting a little more sauce on each slice, but it was really unexpectedly tasty! We both had to restrain ourselves from polishing off the whole thing (to save a slice for Lena’s lunches.)
